Gluten is a protein found in wheat, barley, rye, and related species. Gluten helps baked goods keep their form and adds a chewy texture. More and more, gluten is being added to foods for texture and taste purposes. Things you might not realize have gluten include sausage, blue cheese, pickles, candy, chocolate, mustards, and even instant coffee. It’s in everything!
So who should go gluten free? Well, there are some people who must be gluten free if they’ve been diagnosed with Celiac Disease or gluten sensitivity. Others have simply realized that gluten causes them inflammation and limit or cut it from their diet.
